They are available with a single or double blade. Hand-sharpened and carefully finished, they remain permanently sharp. Some of our highest quality models are additionally hardened, just like a chef's knife, and are therefore ideal for long-term and frequent use, for example in the catering trade.

Dishwasher-safe mincing knives with plastic handles can be cleaned in the dishwasher. However, to keep the hand-sharpened blade permanently sharp, we recommend cleaning by hand.
